Innovative Indian food with a twist at the newly opened SALT

Bengaluru has been lacking great Indian food for a very long time. Sure they are these few places which still held their ground in terms of high quality food served. But we still felt that missing piece. We have had food with rich flavouring, fancily plated food, signature dishes made by well known chefs, yet there was something our taste buds was missing out on, what happens in the kitchen of a restaurant has always been magical to any foodie, But It’s the simplest thing available on our table that we Indians love so much that changes the taste of any dish for the better, SALT. The newly opened restaurant in VR MALL, Whitefield has one of the most divine Indian foods we have ever tried.

Indian food with a twist is how it can best be described if you ask any staff at SALT.  The mastermind behind the food here is Chef Bala. A very well reputed chef and previously a chef at Michelin star hotel. The ambiance is set out to be for a very formal dining with a European themed ambiance set up. The ambiance of the outdoor seating is a whole new story. Being located on the third floor, the view from here is absolutely beautiful. With flower pots and Mini Street like lamps decorated on the outside, you’d feel in a different country right away. The outdoor seating can get very windy at times, but we liked being troubled by nature while having some incredible Indian food.

The staffs here are very well trained and welcoming. We took the outdoor seating since we were here in the evening the weather was just perfect.  We were greeted with a portion of finger chips accompanied with 4 in house sauces which were to die for, Pineapple chutney, honey yogurt, beetroot mayo and the usual mint chutney. Every single one of the chutney’s we tried here were absolutely amazing. It was for these 2 minutes we completely forgot the purpose of our visit and spent our time admiring and devouring our way down like there was no tomorrow. This definitely brought out the child in us.

After having such a great start, we had our expectations really high. We started with ROASTED PANEER, BROCCOLI and FRUIT SALAD. Tandoor grilled paneer along with some very juicy broccoli and freshly cut fruits topped with salad dressing made for a very interesting salad. We loved the twist of paneer and fruits in a salad together. The salad leaves dressing with the house spices was well made too.

SALT’S DHABA SALAD: The name of the dish caught our attention immediately. This super salad had watermelon, tomato. Cucumber, cheese, peppers, olives, chickpeas, RAW MANGO, MASALA PAPAD, and fresh exotic garden leaves in a mustard vinaigrette dressing to complete the salad. We loved the raw mangos and masala papad being the dhaba salad. The cheese do deserve a special mention too, they tasted absolutely rich and flavoursome.

Before we moved to the starters we decided to try some of their signature drinks. We tried ORANGE BERRY, MELON MERRY, HOT APPLE TODDY and ELANEER. DESI PAAN. Orange berry and melon berry were two drinks we loved for their fruity taste; The APPLE TODDY was a great drink and perfect to cure anyone from a cold.

ELANEER, a vodka based drink was an absolute delight to have. The coconut water with lemon grass made for a very refreshing drink.

DESI PAAN: The desiness we could taste in this was unreal. Betel nut, gulkand, lemon and sugar sprinkled with jeera. Simple ingredients but combine them together and you have yourself a very interesting Indian cocktail.

We then tried their starters. BHARWAN MUSHROOMS. Cumin and garlic, tempered spinach stuffed in mushrooms, char grilled to perfection and accompanied by our favourite mint chutney. The mushrooms was well grilled and flavoursome. 

DAHI TAWA KABABS: The chef’s Signature dish. We heard a lot of praises about this dish and that didn’t stop as we become a part of the praising once we had a bite of this. Hung yogurt and cottage cheese spiced and blended together to create this unique delicacy.

SUBZI KUR KURE: Deep fried parcels of roomali stuffed with cumin spiced vegetables. Cashew nuts and raisins, served with mint and tamarind chutney. A very light and crispy dish.

SAFFRON CHICKEN MALAI TIKKA: Tender boneless chicken thighs, char grilled in a rich marinate of saffron, cheese, green chilli, garlic, and thyme marinade. Every single bite of this was palatable, a must try dish, the malai flavouring was so rich and we loved this.

GALOUTI KEBAB: A rich delicacy of extremely fine lamb which simply melts in your mouth. Served with saffron bread, hung yogurt dip and dried rose petals. Lamb lovers must try this and wait for the flavours to uncover as it melts in the mouth.

HOUSE BLACK DAAL : We claim this to be one of the best Dal Makhani we have ever had. Simmered for over 24 hours, the way dal makhani should be made for that extra harmony. The daal is dark, rich and deeply flavoured. We loved the daal and couldn’t help but finish every richly flavoured drop of it.

PANEER TIKKA HARE PYAZ:  Cottage cheese grilled in tandoor and finished in a cashew and onion tomato masala with spring onions. This a curry dish, Goes very well it Indian breads, and a great dish to start off with.

We tried the paneer with their special breads. Mixed olive naan, sun dried tomato, house special and basil. These are must tries, especially the mixed olive naan. A very unique way of making naan.

After our hearty dining, we wanted to try their dessert. There was a lot of talk going about their ELANEER PAYASAM. So we decided to try this out first. There was a lot of hype on this and yet, it managed to beat our expectations. We loved this dessert. The elaneer again made for a very refreshing add on to the overall flavouring of the dish. This also happens to be the Chef Bala favourite and we could see why.

We also tried their JAMUN TIRAMISU: Beautifully plated, and tasted absolutely amazing. We loved the dessert and the coffee sprinkles just added on to the taste.

Chef Bala really knows how to hit that sweet spot of the Indian taste buds. That topped with the very soothing ambiance makes for a very beautiful place. Do let us know about your experience here, CityShor team is sure you’ll love it.
